Quinoa and Roasted Vegetable Salad

Ingredients for Salad

  • 1/2 cup Quinoa

  • Roasted Vegetables (your preference)

    • Broccolini

    • Cauliflower 

    • Mushrooms 

    • Asparagus

  • Baby Spinach or any lettuce of your choice

  • 1 can of legumes (your preference)

    • Chickpeas

    • Butter beans

    • Cannellini beans

Ingredients for Dressing 

  • Greek yogurt

  • Dijon mustard

  • Honey

  • Nutritional yeast

  • Black pepper

Method 

  1. Roast vegetables with salt and olive oil at 180 degrees celsius 

  2. Cook quinoa to desired consistency 

  3. Stir warm vegetables and quinoa through cold baby spinach, so it starts to wilt

  4. Add legume of your choice and stir through the yogurt dressing
